Tight Times

Just starting a new category for those of use who have to save some bucks to stay afloat. The Tight Times blog will have budget-wise tips to help us all keep from being homeless.

Here is a recipe for starters:

Cheater’s Pesto

No garlic, parmesan cheese, olive oil, or fresh basil? Try this recipe:

1-2 cups frozen spinach,thawed and steamed just for a minute or two. Drain and add 1-2 Tablespoons dried basil or Herbs de Provence. Mix in and cover. Boil some pasta, amount is flexible depending on how much servings you want. A half box of pasta is good for me. When pasta is ready, drain and set aside.

Blend the spinach with enough caesar dressing to give it a good consistency. Add nuts, more oil, etc. if you feel like it. Pour over cooled pasta, add salt and pepper to taste, and serve.

Low cost pesto, who knew it was possible?
